Our Story

George's Table is named after both of our grandfathers.

Michelle's grandfather, George, was Palestinian, a man who knew how to gather people around food and make them feel like family. Thom's grandfather, Georges, was French, quiet, particular, and someone who believed that care shows up in the details.

We met in Melbourne. Michelle had been working in hospitality for years, bars, service, the kind of roles where you learn to read a room before anyone says a word. Thom had trained as a pastry chef in Paris, working at Gérard Mulot, where mornings started at 4am and every petit gâteau had to be perfect.

We used to joke about opening a café one day. The kind of place where coffee is made properly, pastries are baked fresh, and by late afternoon, wine appears and the rhythm slows. Somewhere that feels less like a transaction and more like a table you've been invited to.

After 17 years combined in Australia, we stopped joking and started building.

George's Table opened in Port Melbourne in 2025. It's a café in the morning, flat white, croissants, simple plates that don't need explaining. By late afternoon, it shifts. Wine is poured, small plates come out, music drops low.  It's apéro, the French ritual of winding down well.

This place is a tribute to where we come from, and an invitation to sit, stay, and take your time.
